My stay just two stops on the light rail from the Mall of America at the Hyatt Regency Bloomington has been superb. Interviewing Chef Paul Lynch about his hyper-local cuisine and touring his brand new garden were a highlight of my visit. My meals at Urbana Craeft Kitchen were fantastic! I loved the latkes, the abelskivers and the
